BLACK BEANS with CARROTS

Yields4 Servings
 1 cup black beans, or black soybeans
 3 cups water
 2 inch piece of kombu sea vegetable
  tsp sea salt per cup of beans
 1.50 tsp tamari or soy sauce
 1 cup carrots, cubed
 ½ cup cilantro, shopped

Wash beans with cold water, add water and soak for 8 hours or overnight. Use 3 cups of fresh water, add kombu and bring to a boil and then simmer about 3 hours, or till soft. Check the water level occasionally. Toward the end of cooking add sea salt, tamari and carrots. Simmer for 5-15 minutes before serving. Garnish with shopped cilantro.

Pressure-cook the beans for about one hour. Release the pressure and add sea salt, tamari to taste, and the carrots. Simmer for 5-15 minutes before serving.

Use other vegetables like squash or onions and add spices like ginger, turmeric or chili pepper.
