sweet and sour Purple Cabbage

 1 tbsp extra-virgin olive oil
 1 medium red apple, cored and diced
 1 medium red cabbage, cored and sliced finely
 1 tsp sea salt
 1 tsp apple cider vinegar, or to taste (can also use balsamic or umeboshi plum vinegar)
 Purified or spring water

Heat oil in a stainless steel pot to medium heat. Add apple, and then cabbage, stirring after each addition. Add sea salt and apple cider vinegar and mix again. Add water to half cover the vegetable. Bring all to a quick boil and simmer for about 10 minutes or until the cabbage is soft and tasty. Serve as a side dish with whole grains and a bean dish.
