Squash Stuffed with Wild Rice Nut Pilaf

 1 medium Hokkaido squash or buttercup squash

Preheat oven to 350' F. Cut open the top of the squash and empty out the seeds.

Place Squash in a glass baking dish or other pan with a lip, add a small amount of water and cover with parchment paper and then Aluminum foil. Bake for about 1 hour, or till done, but not too soft.

Remove from oven and stuff the squash with the QUINOA NUT PILAF. Before serving, reheat in oven for only 10 minutes.
